Ingredients:
For the Steak:
4 medium-sized steaks (such as ribeye, sirloin, or your preferred cut)
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
For the Garlic Herb Potatoes:
1.5 pounds baby potatoes, halved or quartered depending on size
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Steaks:
Season the steaks generously with salt and pepper on both sides.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Once hot, add the steaks to the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness.
Remove the steaks from the skillet and set them aside to rest.
Cook the Potatoes:
In the same skillet, add an additional 3 tablespoons of olive oil.
Add the baby potatoes and cook for about 10 minutes, or until they start to soften and turn golden brown.
Stir in the minced garlic, rosemary, thyme, and oregano. Cook for another 2-3 minutes.
Season with salt and pepper to taste.
Combine and Serve:
Slice the rested steaks against the grain.
Add the steak slices back to the skillet with the potatoes. Toss gently to combine.
Garnish with fresh parsley.
Serve Hot:
Serve the garlic herb potatoes and steak skillet hot, optionally with a side of steamed vegetables or a fresh salad.
