chicken wings

INGREDIENTS:

  • 2 pounds chicken wings
  • 1/2 cup chopped coriander
  • 1/4 cup + 2 tablespoons fresh lemon juice (about 4-5 limes)
  • 2 cloves of garlic
  • 2 tablespoons avocado oil (olive oil can be substituted)
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper (optional)

Preparation:

To marinate the chicken:

Add coriander, lime juice, garlic, oil, chili powder, salt, pepper and cayenne pepper to a food processor and blend until smooth.

Then place the chicken wings in a large plastic bag or bowl and add the marinade. Seal the bag or cover the container and marinate for 30 minutes (or up to 2 hours).

While the chicken wings are marinating, prepare half the marinade recipe and set aside to soak the wings later. (This step is completely optional, but it adds flavor to the chicken wings.)

Air fryer method:

Preheat the hot air fryer to 390 degrees. Once done, remove the wings from the marinade and place them in a single layer in the air fryer basket. Halfway through cooking, the chicken wings are fried for 18-20 minutes (about 9-10 minutes).

Serve chicken wings immediately with lemon wedges and additional dipping sauce.

Cooking method:

Preheat the oven to 400 degrees and place a large rack on a rimmed baking sheet. Then spray the grate and pan with cooking spray.

Next, remove the chicken wings from the marinade and place them in a single layer on a wire rack. Place the mold in the oven and bake for 30-35 minutes. (Don’t twist the wings!)

For extra crunchiness: Grill the wings for 2-3 minutes after searing.

Serve immediately with lemon wedges and additional dipping sauce.
