The Easiest One Skillet Creamy Mushroom Chicken

INGREDIENTS

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 8 ounces sliced mushrooms
  • 1/4 cup butter
  • 2 garlic cloves minced
  • 1 tablespoon flour
  • 1/2 cup chicken broth
  • 1 cup heavy cream or half and half
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt

INSTRUCTIONS

Step 1: Heat olive oil in a large skillet over medium-high heat.
Step 2: Cook the chicken for 3-5 minutes on each side, or until it’s browned and no longer pink in the center. Remove the chicken from the skillet and set it aside on a plate.
Step 3: In the same skillet, add the sliced mushrooms and cook for a few minutes until they are tender. Remove the mushrooms from the skillet and set them aside.
Step 4: In the same skillet, melt the butter. Add garlic and cook until it becomes tender.
Step 5: Whisk in the flour until the mixture thickens. Gradually whisk in the chicken broth, heavy cream, parmesan cheese, garlic powder, pepper, and salt.
Step 6: Add the spinach and let it simmer until the sauce starts to thicken and the spinach wilts.
Return the chicken and mushrooms to the sauce.
Step 7: Serve the dish over pasta if desired. Enjoy your meal!
