Eggplant meatballs: tasty, nutritious and diet-friendly

Meatballs are one of the most popular preparations in the world, especially among children. In this article, we propose an excellent alternative to meatballs: eggplant meatballs will leave you speechless. Eggplant is a vegetable rich in health benefits, and especially suitable for children.

Ingredients for 4 people: 450 g of eggplant, 10 g of spinach, 1 small onion, 3 coves of garlic, 4 tablespoons of breadcrumbs, 1 sprig of chopped parsley, 1 egg, salt and pepper to taste.

Wash the eggplant, cut it into cubes and mash it. Meanwhile, preheat the oven. Chop the onion and fry it in a little olive oil. Add the pepper and garlic, then the eggplant and spinach.

Adjust the salt and let it cook for about 10 minutes, stirring every 2 or 3 minutes, and remove from the heat. Meanwhile, beat the egg with the parsley and add it to the already heated preparation, creating the meatballs with your hands. Pass them in breadcrumbs and bake for 10 minutes at 250°.


You can also fry the eggplant meatballs.
